The pinto bean is the most popular bean in Northern Mexico and the Southwestern United States, and is most often eaten whole, or mashed and then refried. Its name derives from the appearance of the beans – pinto beans are beige and speckled brown on the outside. “Pinto” is Spanish and means “painted”, which is a reference to their lovely colouring. Pinto beans are free of cholesterol and low in fat and sodium. Also great in bean salads and warm winter dishes.
